Carol Ann Fields Hunkin, 79, crossed over to Eternity on Wednesday, January 28, one day short of her 80th birthday. When we look at the time she spent on earth: 1946-2026, we acknowledge that she lived a rich and beautiful life represented by this one sacred dash - a placeholder for a race well-run, years abundantly full of love, laughter, and joy.
In addition to her grandparents, those who began their eternal journey before her are: Her husband of 39 years: Edward Maiava Hunkin; her parents William “Billy" & Shirley Fields; a sister taken in her first year of life: Sharon Rose Fields; siblings: William “Bo” Fields, Tommy Fields, Linda (Henry) Cook, and Steve Fields; and a nephew, Chad Fields.
She leaves behind an army of family and friends who cherish her memory: first and foremost, her beloved daughter Tamara Hunkin and the grandson who is the apple of her eye, Spencer Kossatz - along with his father John Kossatz. Also surviving her are: her sisters: Debbie (Jimmy) Eades, Teresa (Steve) Coates, and Jackie (Garrett) Burton; her brothers: David (April) Fields, Mike (Mary) Fields and Ricky Fields; cousins who felt more like siblings; her nieces and nephews, her extended family in American Samoa; countless friends across her lifetime, including those in her church family; and a new generation of great-nieces/nephews who will always smile in remembrance of her.
Carol was the oldest of twelve children. She watched over her family, at times like a second mother, during the course of her life. In a time of unrest that required courage and fortitude to enlist in the Army, especially as a woman, Carol did just that and embarked on the adventure of a lifetime. She was assigned to Aberdeen Proving Ground in Maryland, where a divine encounter with a fellow soldier led to finding her life’s love and the creation of her own cherished family.
While stationed in Okinawa, Eddie and Carol welcomed Tammy, to the world. They continued on to Germany, then moved back to the States, Lexington was the start to civilian life, followed by Lawrenceburg KY, Austin TX, Greencastle, IN and thankfully settling back into Central Kentucky.
Carol balanced devoting her life to The Church of Jesus Christ of Latter-Day Saints, her husband, daughter, and extended family alongside pursuing some of her creative passions, later graduated from college and worked for the State Department of Transportation from 1990 through 2005.
Carol was known for her playful personality, prankster prowess, her affinity of scary tales and classic films, and her creativity in cooking, crafting, and sewing. She hosted family gatherings with such excitement, especially game nights. When loved ones were asked for memories of Carol, they agreed she overflowed with love and kindness. She was a peacemaker. The beauty and joy of her heart spilled over onto her face; rarely would you catch her without a smile…and was expressed through her talented hands. If there was anything worth celebrating, you would find Carol and Tammy planning it. Wedding and baby showers…birthdays and anniversaries…and everything in between. Chances are if you are married, it was Carol and Tammy (even Eddie when he was alive) who baked, decorated, and transported the masterpiece that was your wedding cake.
Visitation will take place on Friday, February 6 at Kerr Brothers on Harrodsburg Road. Visitation will be 9:00-10:30 am. The service immediately follows at 10:30am. Following the service burial will take place at Camp Nelson National Cemetery.
