Nichole Osborne Struk of New York, New York passed away unexpectedly on June 19, 2021 at the age of 37. Nichole was born May 20, 1984 to Jane and Joseph Osborne in Mankato, Minnesota. She grew up as a little girl who loved animals, spending time with her family, especially her grandparents, and having fun with her friends. She always had a smile on her face. She graduated from Mankato West High School in 2003. After high school she attended Johnson and Wales University in Providence, Rhode Island, where she majored in Equine Management . She graduated Summa Cum Laude in 2007. Her love for animals as a young girl never wavered even into adulthood. Nichole lived in many different places as an adult and made friends wherever she went. She had a magnetic personality that people were automatically drawn to. She met her future husband Brenndon in December of 2013 at an illegal bike race in New York City. They shared 8 wonderful years together, getting married on September 14, 2017 in New York, New York. She was a beloved wife and a very proud cat mom to Colonel Macaroni and Cheese and Chancellor Tortellini. Nichole was also a devoted Aunt, always making sure her nephews knew how much she loved them and stressed over sending them the best gifts for every occasion. Nichole was an excellent cook and the greatest mixologist out there, always coming up with new creations that were delicious every time. Nichole is preceded in death by her grandparents Paul and Marian Gislason, and Joseph Osborne. She is survived by her husband Brenndon Struk, Grandmother Louise Osborne, parents Joe Osborne, and Jane Arcand, Mother in law Joanna Wycoff, brother and sister in law RJ and Katie Osborne, nephews Oakley and Cannon Osborne, sister in law Jenevieve Struk, and numerous other extended family members.
