Cathy was born on December 2, 1948 in Washington, D.C. to Raymond and Iris (Spencer) Gillespie. Growing up, Cathy was fortunate to live all over with her family during her father’s military service. Eventually, upon his honorable release from the military, Cathy’s family would settle in Salem, Oregon. She would attend North Salem High School. Early on, Cathy attended beauty school but found it was not what she wanted to do. Eventually, she would attend Mt. Hood Community College and transfer to Portland State University where she would earn a degree in human resources. The degree she received led her to working as a case manager for the State of Oregon, until her retirement. Cathy met her future husband through his co-workers at a tire store in Salem. She married David Cook on January 3, 1969. David and Cathy would build their family home in North Fork, where they would also raise their children. They were blessed with three; Travis, Justin and Michelle. Cathy was the matriarch of the family who always got everyone together and hosted events. It was not uncommon for her to cook and make wonderful meals for her family. She was happiest being around those she loved. She had many other talents, such as being an incredible green thumb. It would not be unusual for her deck at home to be covered with beautiful flowers and bountiful vegetables growing. She loved living out in the country where she could enjoy nature, trees, and could be connected with nature. Cathy was an avid reader who would complete a new book every 2 to 5 days; her favorite genres being fantasy or fiction novels. Another skill she possessed was being an exceptional bargain hunter who could always find a good deal! But if you truly had to summarize words that described Cathy as a person- she was happy, fun, smart, thrifty, and was very much loved. Cathy passed away on September 8, 2020 as a result of the Beachie Creek Fire at her home in North Fork, along with her beloved son Justin. She will leave a lasting legacy through her family, who she loved immensely. She is survived by her husband, David Cook; children, Travis Cook and Michelle Cook Breedlove; siblings, Janice Brown and Jimmy Gillespie; grandchildren, Billy, Jessanie, Adalynn and Jacob. A private memorial will be held to family.
